Any mamas out there have trouble getting your kids to eat more (or any) vegetables? Veggies have been a hard sell in this house. My oldest has sensory issues, so getting him to eat ANYTHING has been a challenge since he was born. He certainly will not eat vegetables (unless pizza sauce counts).

What all my kids love, though, is chocolate cake. Who doesn’t? So here is my chance to add some healthy greens to one of their favorite snacks, and they won’t even know!!

My oldest, the pickiest one, begged me for more “cake”. Of course, I didn’t mind giving him another piece because so far, this has been the only successful way I’ve gotten him to eat spinach.  Whatever works! Right, mamas?


Let’s get to the recipe, shall we?



1 1/2 Cups All Purpose Four

1 1/2 Tsps Baking Powder

1/4 Tsp Baking Soda

1/8 Tsp Salt

1 Tsp Ground Cinnamon

1/2 Cup Cocoa Powder

3 Ripe Bananas

1 Cup Finely Chopped Fresh Baby Spinach

1 Egg

1/4 Cup Cooking Oil

1 Tsp Vanilla

3/4 Cup Brown Sugar



1.) Preheat oven to 350 degrees. Grease a bread pan and set aside.

2.) In a large mixing bowl, mix the first six ingredients.

3.) In a separate bowl, mash bananas. Mix in the rest of the ingredients.

4.) Add wet ingredients to dry ingredients, and mix well until fully incorporated.

5.) Pour into greased bread pan, and top with chocolate chips or walnuts (optional).

6. ) Bake at 350 for 55 minutes or until done.


Let cool! Enjoy! Your kids will love it too!
